Egg and Cheese Phylo Dough Pie
Preparation time: 30 minutes
Bakin time: 40 minutes
Serves: 20 pieces
- 1 packet phylo dough - about 12 sheets
- 300 grams feta cheese
- 125 g butter
- 4 tbsp vegetable oil
- 3 eggs
- 250 ml of unflavored carbonated/sparkling/ water
Melt the butter using water bath. With a fork to crumble the cheese into small pieces. Turn oven to 180 degrees Celsius.
Coat the bottom of a baking pan with some butter. Choose the size of the pan depending on the size of the phylo dough sheets – one spreaded sheet should cover the pan bottom.
Take one sheet and place it over the pan bottom. If it is wider, gently wrinkle it with hands in order to fit the pan. In the same way, one by one, lay down another two sheets. Evenly, sprinkle one third of the crumbled cheese. Put a new layer of 3 sheets. It is important to be placed one by one in order to preserve the air between them.
Repeat the cheese/sheets layers two more times. Finish with a layer of phylo dough sheets. With sharp knife, carefully cut the pie into square pieces.
Mix the oil with the butter and evenly pour it over the pastry. Wait a minute or two to absorb.
Meanwhile, beat the eggs and add the sparkling water. Spread mixture evenly over the pie. Allow to absorb completely.
Place it in preheated oven and bake about 40 minutes until browned.
Serve warm with yogurt.
P.S. Today 3d of March is the National Holiday of Bulgaria. This is a very traditional Bulgarian dish! It can be serve for breakfast or as an appetizer.
