Cooked Beans with Dried Wild Mushrooms

Detailed instructions for cooking the beans can be found here.
- 2 cups beans
- 1/3 cup olive oil
- 2 carrots
- 4 cloves garlic
- 2 onions
- 1 tsp dried thyme
- 1 tsp ground chilli pepers
- 1 tsp salt
- ½ tsp ground black pepper
- ½ cup dried mushrooms (I used penny buns)
- small bunch fresh mint
Put beans in a deep dish and cover it with hot water. Allow to soak for several hours. Put to a boil. Detailed instructions for cooking the beans can be found here.

Peel and cut the onions, garlic and carrots.When beans are meddium done add all ingredients into the sousepan and continue cooking.
Simmer until beans soften and can be crushed with a fork. Turn off the heat and add the chopped mint.
Serve with tosted bread and fresh salad.
