Crêpes - French Pancakes


For several years, I am constantly reading and following food blogs. Very often, my inspiration for cooking comes from there and from my cookbooks. Of course, I have a few favorite blogs, which I check every day, and some on which come across by accident. And thus, gradually, the idea of my own blog was born and the result is www.sundaybakeclub.com.
Last week, reading a recent article at Meeta’s site - "What′s for Lunch Honey", I came across her announcement about the new guest hosts of her "Monthly Mingle".
This is an initiative, which each month is hosted by different person. The host is obliged to choose a cooking topic of the month. Anyone interested can join by preparing something on his/her blog and publishing it with a reference to "Monthly Mingle" host’s blog. This is very interesting and funny way to promote your site and at the same time to exchange new ideas. So I decided to try it.
This month hostess is Astrid, from Paulchen′s Food Blog. The theme” Small Bites – soul food for loved ones” is influenced by Valentine′s Day, also very popular in Bulgaria, though nothing to do with our Eastern Orthodox religion. But Valentine′s Day coincides with our celebration of the day of wine – St. Trifon Zarezan and because of this I wanted to do something suitable for both holidays.
I went through a few books and magazines and finally stopped on pancakes. Hardly, there is anyone who has not tried to make pancakes at least once in live – I would say that pancakes can be prepared under every condition, which makes them suitable when you want everything to be perfect.
Pancakes with a gentle flavor of white wine and orange, are the perfect dessert for St Valentine′s Day and Trifon Zarezan′s Day.
If dried figs and white wine filling is not according to your taste or seem strange, you can always replace it with some of the following combination: orange and sweet caramel syrup or melted dark chocolate, strawberry jam with ground almonds, white chocolate and dried cranberries.
Crêpes with figs and white wine

Cooking time: 30 min
Serves: 8 medium pancakes

For the filling
- 100 gr dry figs cut in small pieces
- 100 ml dry white wine
- 4 table spoons of sugar
For the butter
- 1/4 tea spoon vanila ekstract
- 2 eggs
- 250 gr flour
- 250 ml milk
- 2 table spoons sugar
- 1 tea spoon grated orange peel
- 50 gr finely grated almonds
In a bowl combine figs with the wine and sugar. Leave it on a side for 30 minutes. In another bowl beat the eggs with the two table spoons of sugar and the milk. Add vanilla extract and grated orange peel and gradually incorporate flour and almonds. Whisk until butter is homogeneous. Put the pan on the stove to heat. Add a little bit of butter and swirl to coat the pan surface. With a small coffee cup pour from the pancake butter in the pan and again swirl to coat. Fry for 2 minutes on a high heat and turn around for additional 1 tо 2 minutes. Transfer in a dish and repeat until butter is over. Coat each pancake with melted butter.
Divide the fig-wine filling between each pancake, fold into triangle and serve with a glass of dry white wine.
