Salad with Couscous and Green Beans

- 100 g couscous (Arabic)
- 300 g fresh green beans
- 1 cucumber
- 1 lemon
- 100 g cheese
- 100 g roasted pistachios
- green onions
- fresh parsley and mint
- olive oil
Pour the same amount of boiling water over the couscous and stir vigorously. Leave on a site to cool. From time to time stir with a fork to prevent sticking.
Wash and clean the beans. Put a small saucepan of water to a boil. Add a pinch of salt and drop the beans. Bring to a boil again and detect minute, minute and a half. Remove from heat and throw out boiling water. Pour very cold water and put extra ice cubes. This will keep the crunchiness and fresh green color of the beans.
Peel cucumber and cut into cubes, chop parsley, mint and green onion. Crumble the cheese.
Cut the beans into large pieces.
Mix all ingredients with the couscous. Grate lemon zest and add it to the salad. Season with lemon juice, olive oil and salt to according to your taste.
Leave in the refrigerator for about an hour and serve topped with shelled pistachios.
