Cooking time: 20 minutes

 

 


 

Wash and dry all vegetables. Cut the eggplants into thick slices, salt and put on a side for 15 minutes. Cut the peppers into halves and remove the seeds and stalks.

Cover a large baking tin with parchment paper and arrange all vegetables. Put all green herbs on top.

 

 

Salt and sprinkle with olive oil.

Roast for 20 minutes at 200ºС.

Serve warm or cold with fresh tomatoes and feta cheese!
