А Cookie with a Scent of Rosemary, Apricot and White Chocolate

Baking time: 15 minutes
Serves: 30 cookies

 

 

 

 

 


In a bowl mix all dry ingredients - flour, oats, baking powder, baking soda, salt and rosemary.
In another bowl, beat butter with sugar until creamy. Add the eggs one at a time and stir until fully incorporated. Stop the mixer, add chopped fruits, cashews and chocolate and mix again with a wooden or plastic spoon. Gradually add the dry ingredients and stir until receiving soft dough.

Cover two trays with baking paper and preheat oven to 170 º C.
From the dough shape small balls with size of a walnut. Press slightly and arrange them in the baking tray.

Leave about 2 cm space between each ball and from the edges of the tray (as the dough is very soft and creamy, under the heat, cookies will spread).


Bake for 15 minutes until browned on the edges.
