Couscous Salad with Fresh Mint
Preparation time: 1 hour
Serves: 6
- 1 cup Moroccan couscous
- 1 large tomato
- 1 cucumber
- 4 green onions
- a small bunch of fresh mint
- a small bunch of parsley
- 50 g raisins
- 4 tbs olive oil
- 4 tbsof vinegar or lemon juice
- salt
Put couscous into a bowl and pour the same quantity of hot water over it. Stir vigorously with a fork so that the water is completely absorbed. Add raisins and let to cool.
Dice the cucumber. Clean the seeds from tomatoes and dice. Chop the green onions and the spices. Mix all ingredients, season with olive oil, vinegar and salt according to your taste. Leave in the refrigerator for about an hour to allow couscous to absorb all of the flavors.

Serve in small lettuce leafs or other type of greens. The most appropriate in size are chicory leafs
