Sweet Easter Bread

 

Preparation Time: 5:00 hours
Serving: 3 large loafs



 

Crumble the yeast in a small bowl, sprinkle a pinch of sugar and a pinch of flour, pour in some milk, cover and leave it at a warm place to rise.
Slightly heat the milk and dissolve the sugar and vanilla.
Beat the eggs in separate bowl and add the lemon peel.
Sift  the flour / 1 kg / into a deep bowl and shape a well in the middle. Gradually add the rised yeast, and stir.
Combine eggs and milk mixtures and add it slowly to the flour, by stirring with the free hand. Star kneading. Knead until a medium thick mixture is formed. If  needed add  a little bit of flour to thicken the dough.
Then start to incorporate melted  butter - add a little bid of it, knead, then again some butter. Repeat until the whole amount is consumed. If the dough stays hard, use more butter to soften it by additional kneading.


**** If you are strength enough, you can hit the dough from 50 to 100 times against the kneading board by throwing it with your hands from up to down the board. Thus, the dough will incorporate more air. This method is effective when the dough is too hard. The dough  of the breads from the picture is hitted several times <50, but I think in this case is not relevant because, next batch of dough  was not  treated in this way and turned pretty good.****

 


Place the dough in n a warm place to rise until dobled in volume. It takes an average of 2 hours.

**** To accelerate the rising, I use a small electric heater that blows warm air. Heater  is placed at a distance of about one meter from the container with  wrapped dough. Turn it on a  medium heat, so as not to overheat the dough. The temperature of the room should be around 20-22 degrees. If you don’t have that kind of heater, rising will take about 4-5 hours .****

 

Put baking sheet in a baking dish.
Divide the risen dough to 3. And then shape 3 more pieces of each part in order to be able to make a braid. In every part put chopped Turkish delight, raisins, orange peels and crushed nuts / rolled in flour / wrap the filling into the dough and then plait the  three parts of the braid.

 

 

Put the cake in the pan and let it rise /about 30-60 min / until almost doubled in size.

Bake in preheated oven at 170 degrees between 40-50 minutes.

Take it out from the oven and ... mmm - Enjoy!
