Broccoli and Orange Salad


My week was busy and I wasn′t able to post on time at the board this week menu. But I presume that from my announcement on Facebook, you have already guessed that it will be something healthy. It will be so till the end of March.
Now, do not hip and do not think you will eat only nasty green things. I will try to offer recipes that can be easily prepared and will appeal even the biggest enemies of a healthy diet.
Today, I am late and will not waste time explaining why you should eat healthy - I think that all is clear.
During the following weeks I will try to inform you in details about all trends in healthy living.
Now, go quickly to the store for a head of broccoli, a package of ground coriander and a couple of oranges. Just a moment - for those of you to whom this sounds too healthy – get also a piece of fish or meat (chicken or beef), which baked in the oven or grilled will be the perfect addition to our Sunday broccoli and orange salad.
Broccoli and Orange Salad

- 1 medium head broccoli
- 2 oranges
- 1 small head purple (salad onions)
- 50 g ground walnuts
- 2 tsp soy sauce
- 1 tsp balsamic or apple vinegar
- 2 tsp olive oil
- 1 tsp ground coriander
- ground black pepper
In a large bowl cut or tear washed broccoli into small pieces.
Peel one orange, divide it into pieces and as much as possible remove the white membrane. Cut into small parts and add it to the broccoli.
In a small bowl, mix the juice of half orange, vinegar, olive oil, soy sauce, coriander and black pepper. Stir well. Pour over broccoli and orange pieces, mix well, cover the bowl with foil and leave in refrigerator for 30 minutes.
Before serving, slice onion into tin rings. Pour some salad in a shallow dish, sprinkle with walnuts and onions.
